Plants belonging to the tribe of legumes (Fabaceae) has many benefits in everyday life as a vegetable source of high protein food. Kacang hijau in Indonesia ranks as the third most important legume crops, after soybean and peanuts. It is a fresh drink made from green bean, and it has good nutrient for our skin and our hair.
This drink contains many vitamins like B and E , and many benefits for human health, good for diabetics. Sari kacang hijau is rich in B vitamins, good for patients with ulcer disease because of alkaline.
Sari kacang is also useful to relief nausea in pregnant women, can increase child's appetite and to nourish the baby's hair. That's true, because the green beans are high in protein, ie to 24 %. While one of them protein itself is needed for hair growth. The ingredients:
- Green beans, 1kg
- Sodium bicarbonate, 1gram
- Water, 1litres, for soaking
- Warm water, 18litres
- Sugar, 2kg
- Salt, as you want
- Pandan leaves or vanilla as you want.
The process:
- Sorting process , This process is a process of separating the good seeds of green beans from the dropping of damaged (cracked, wrinkled, and moldy) to make it more taste.
- Soaking process , after green been selected, it must be soaked first for boiling and grinding take place more quickly. For soaking the green beans you should add the solution of Sodium Bicarbonate to make it not easy acid when soaked. To 1kg green beans need 1gram of Sodium Bicarbonate with 3 litres of water, in 4 hours soaked.
- Boiling process , Before boiling, wash the green beans until they are clean and not slippery, then boiled until soft but not broken for about 30 minutes. This boiling process aim is to eliminate unpleasant odors and soften the green beans , to be more easy destroyed during the milling process.
- Making process , This is the core process of making green bean juice. After the green beans in a blender till soft insert to add as many as 18 litres of warm water and then filtered with soft gauze. If there is separation grounds engine would be better, in order to obtain a liquid extract of green bean that is separated from the waste.
- The process of cooking "sari kacang hijau" , Next boiled with other flavoring (sugar, pandan leaves / vanilla, and salt) to boil while stirring so as not to rupture. If want more savory flavor can add thick coconut milk, and if you want good colour can be added to a natural green dye (suji leaf) or apple green food coloring (green apple) as you want.
- Packaging process, Sari kacang hijau are cooked , can be packaged in a bottle of cup sealer. Green bean juice should be packaged at temperature of 80 degrees Celsius for not quickly broken .
